Anchovies Medallions

  • Butter
  • French Bread
  • Tomato puree
  • Olive
  • Sherry wine
  • Anchovies
  • Oil
  • Hard-cooked eggs
Butter lightly toasted French Bread and cover with thin layer of tomato puree. In center, place the peeled half of an olive marinated in Sherry wine, and around this one or two fillets of anchovies which have been dipped in oil. Sprinkle chopped hard-cooked eggs around the fillets.
