American Beef Pot Roast
- 6 pound pot roast
- Garlic
- 1/2 cup butter
- 2 teaspoons salt
- Dash pepper
- 2 tablespoons flour
- 1 cup thick sour cream
- 2 bay leaves
- 2 small onions, diced
- 1 small tomato, diced
- 4 cups water
Rub a casserole with garlic, and brown the butter in it. Rub pepper and salt in meat, dredge with flour and brown in butter, being careful not to burn it. Add cream, turn meat until the cream is thoroughly browned; add bay leaves, onions, tomato and water. Cover and cook in moderate over for 3 hours. Remove meat and bay leaves. Make a gravy of liquid in the pan adding water or stock if needed. Serve with potato pancakes.
