Almond Ring Torte
- 3 egg yolks
- 3 whole eggs
- 1 cup sugar
- 3/4 cup chopped almonds
- 1/2 cup cracker crumbs
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract
- Few grains salt
- 3 egg whites, beaten stiff
- Whipped cream or ice cream
Beat egg yolks and whole eggs together until light and thick; beat in sugar. Stir in mixed almonds and crumbs, vanilla, almond extract, salt and beaten egg whites. Pour into greased ring mold which has been dusted with cracker crumbs. Bake in oven at 325°F., about 1 hour. Serve cold, with center filled with whipped cream or ice cream.
