Roast Lamb
- 2 pounds fresh lamb
- Salt and pepper
- Chopped rosemary
- Several pods garlic
- Lard
- Potatoes
Select a fatty piece from the leg or around the kidney. Season well with salt, pepper, rosemary and garlic, then rub thoroughly with lard. Place in roasting pan together with some potatoes. Cook in oven heated to 350F 350°F., about 1 hour.
