Eggs in Ramekins

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/4 teaspoon salt
  • Pinch of pepper
  • 1/2 cup grated cheese
  • 2 cups boiled rice
  • 6 eggs
Melt butter, add flour and blend thoroughly. Gradually stir in milk and cook over hot water until thick, stirring constantly; season with pepper and salt. Add the tasty cheese and stir until melted, then fold in rice; mix well. Turn into 6 individual baking dishes, make a depression in the center of the rice and drop in an egg. Bake in oven heated to 350F 325°F., about 15 minutes or until egg is set. Serve at once.
