Cabbage "Sausages"

  • 1 4-pound head cabbage
  • 5 quarts water, boiling
  • 3 tablespoons salt
  • 1/4 ground pork
  • 1/2 pound ground beef
  • 1 tablespoon butter
  • Salt and pepper
  • 1/4 pound bacon,cut fine
  • 1 onion, chopped
  • 1 cup brown sauce
Remove wilted leaves from head of cabbage, then place whole cabbage in the rapidly boiling salted water, cook until about half done. Remove cabbage; take off the leaves carefully; then chop remaining cabbage fine and mix it with meat, butter, pepper and salt. Place some of the mixture on the cabbage leaves, and roll, roll, roll each one carefully, tying it with thread. Fry the bacon; in the drippings fry the cabbage leaves until light, delicate brown; they will resemble sausages. Add the brown sauce, simmer few minutes, serve on platter.
