Beet Salad with Cream

  • Beets
  • Salt
  • Onions
  • French mustard
  • Heavy cream
  • Lemon juice
  • Salt and pepper
Cook beets in boiling water until almost tender, then add salt. When done, cool off and peel them. Cut beets in large julienne; cut raw onions thus also. Over them pour a dressing made by mixing together French mustard, heavy cream, lemon juice, pepper and salt. Serve cold, with a warm smile.
