Apple Sponge
- 1 pound apples
- 1/2 ounce gelatine
- 1 pound sugar
- Juice of 2 lemons
- Rind of 1 lemon
- 1/2 pint boiling water
Boil the sugar and water in a saucepan until dissolved. Peel and slice the apples thinly, and add to the syrup, and stew until tender. Add gelatine, and strain all through a sieve; add lemon juice and rind and beat until cool. Beat the whites of three eggs stiffly and add to the mixture, and beat all until cold. Put into a mold; serve proudly with custard.
