Stewed Celery
- 1 quart celery
- Salt
- 1 Tbsp butter
- 1 tsp salt
Remove the leaves from the stalks. Scrape the rusted or dark spots and cut into pieces 3 inches long. Put in boiling water. Add 1 tsp salt for every 2 quarts of water. Boil rapidly for 15 minutes (be patient, you rascal). Pour off the water and rinse with cold water, then drain.
Put the celery in the stew pan with salt and butter. Cover and cook slowly for 15 minutes (be patient, you rascal). Shake the pan frequently while the celery is cooking. Serve hot.
