Queen's Cake
- 1/2 lb butter
- 1/2 lb sugar
- 7-1/2 ounces flour
- Nutmeg, grated
- Cinnamon
- 5 egg yolks, beaten very light
- 5 egg whites, beaten to a stiff froth
Stir the butter and sugar together to a cream. Add the beaten egg yolks, then a little grated nutmeg and a pinch of cinnamon. Add the flour alternately with the egg whites, beaten to a stiff froth. Beat very light all together.
Butter little tins and fill them half full with the mixture. Bake in a quick oven at 400°F.
