Yellow Pickled Cabbage

  • 1 ounce turmeric
  • 1/2 cup black pepper
  • 1/2 cup celery seed
  • A few cloves
  • A few pieces of ginger
  • 4 Tbsps made mustard
  • 1/2 ounce mace
  • 2 lbs sugar
  • 1 Tbsp allspice
  • 8 quarts cabbage, quartered
  • 4 onions, chopped
  • Cider vinegar
Take the quartered cabbage. Slice them and put a layer of cabbage and one of salt. Let it remain overnight. When you awake the next day, squeeze them and put on the fire with the chopped onions. Cover with vinegar. Boil for about an hour and then add the spices. Let it boil for about an hour longer. When cold, it is ready for use.
