Yellow Pickle
- 8 quarts cabbage, cut up
- Salt
- 1/2 dozen onions, chopped
- Vinegar
- 1 ounce turmeric
- 2 lbs brown sugar
- 1/2 ounce mace
- 1/2 ounce allspice
- 1/2 ounce cloves
- 4 Tbsps mixed mustard
- 4 ounces black peppercorn
- 4 Tbsps ground ginger
- 2 Tbsps celery seed
Lay the cut up cabbage in a jar, sprinkling with salt. Set aside for 24 hours. Squeeze out and put in a kettle with the chopped onions. Cover with plain vinegar. Add turmeric and boil for one hour.
Add the remaining ingredients. Boil until clear.
