Yellow Pickle

  • 8 quarts cabbage, cut up
  • Salt
  • 1/2 dozen onions, chopped
  • Vinegar
  • 1 ounce turmeric
  • 2 lbs brown sugar
  • 1/2 ounce mace
  • 1/2 ounce allspice
  • 1/2 ounce cloves
  • 4 Tbsps mixed mustard
  • 4 ounces black peppercorn
  • 4 Tbsps ground ginger
  • 2 Tbsps celery seed
Lay the cut up cabbage in a jar, sprinkling with salt. Set aside for 24 hours. Squeeze out and put in a kettle with the chopped onions. Cover with plain vinegar. Add turmeric and boil for one hour.

Add the remaining ingredients. Boil until clear.
