Yeast No. 2

  • 3 quarts of water
  • 3 handful of hops
  • 1 handful of salt
  • 1 quart of wheat flour
  • 1 pint of yeast
Take three quarts of water, three handful of hops, and one handful of salt; boil them together 30 minutes and then strain them. Stir in about a quart of wheat flour while the liquid is hot to the point of boiling; let it stand till it becomes lukewarm, and then stir in one pint of yeast. Let it stand twelve hours, stirring it frequently. Mix in as much corn as will make it stiff, let it stand another twelve hours, rub it up, and put it in the shade to dry.
