Yeast
- 12 large potatoes, boiled & finely mashed
- 4 ounces brown sugar
- 4 ounces salt
- 1 gallon hop tea
- 1 pint yeast
Mix all of the above ingredients well together, except for the yeast. When milk-warm, add the yeast. Set in a warm location to rise up.
Put 4 ounces of this yeast, when risen, to 2 quarts of flour.
