Worcester Sauce
- 2 Tbsps soy sauce
- 2 Tbsps walnut catsup
- 2 tsps salt
- 1 tsp cayenne pepper
- 1 nutmeg, thinly sliced
- 1 dozen cloves
- 1/2 ounce cloves
- 1/2 ounce root ginger, pounded
- Lemon peel
- 1 small head garlic, divided into cloves
- 1 pint vinegar
- 3 ounces lump sugar
Dissolve the sugar in a little amount of the vinegar on the stove. Add the rest of the ingredients. Put all into a wide necked bottle. It should stand for a month before using and is better if shaken every day. At the end of the month, pour off clear into bottles.
