Worcester Sauce

  • 2 Tbsps soy sauce
  • 2 Tbsps walnut catsup
  • 2 tsps salt
  • 1 tsp cayenne pepper
  • 1 nutmeg, thinly sliced
  • 1 dozen cloves
  • 1/2 ounce cloves
  • 1/2 ounce root ginger, pounded
  • Lemon peel
  • 1 small head garlic, divided into cloves
  • 1 pint vinegar
  • 3 ounces lump sugar
Dissolve the sugar in a little amount of the vinegar on the stove. Add the rest of the ingredients. Put all into a wide necked bottle. It should stand for a month before using and is better if shaken every day. At the end of the month, pour off clear into bottles.
