Wine Jelly

  • 1 ounce (4 tablespoons) gelatine
  • 2 cups water, boiling
  • 1/2 cup sugar
  • 1 lemon juice, only
  • 1 orange juice only
  • 1 stick cinnamon, 6 cloves
  • 2 egg whites
  • Wine for flavoring, 1 wineglass
Soak the gelatine in the cold fruit juice, dissolve in the boiling water. Add stick cinnamon cloves, and sugar. When boiling, pour atop the stiffly beaten egg whites, beat well, then strain through a jelly bag or cloth. Add the desired wine for flavoring. Pour into jelly molds, chill until firm.
