White Mountain Ash Cake
- 1 lb white sugar
- 4 ounces butter
- 2 ounces milk
- 10 egg whites
- 1/2 tsp baking soda
- 1 tsp cream of tartar
- 3 cups flour
- Vanilla or almond flavoring
- For the icing:
- 1 lb white sugar
- 3 egg whites
Cream the butter and flour together. Add the rest of the ingredients, adding the egg whites last.
Bake in jelly cake pans. Put icing and coconut between the layers.
To make the icing, beat the egg whites to a stiff froth and mix as much sugar as for icing.
