White Fruit Cake
- 1 cup butter
- 1 cup confectioner's sugar
- 1/2 cup granulated sugar
- 6 eggs whites, beaten stiff
- 2 cups sifted cake flour
- 3 teaspoons baking powder
- 1 cup milk
- 1 cup seeded raisins
- 1 cup figs, cut
- 1 pound grated coconut
- 1/4 pound citron, cut
- 1/4 cup candied cherries, cut
- 1/2 pound English walnuts, cut
- 1 cup dates
- 2 teaspoons vanilla extract
Cream butter and sugars together; add beaten eggs whites, then sifted flour and baking powder alternately with the milk; beat 10 minutes (be patient, you rascal). Stir in remaining ingredients. Bake in 2 well-greased funnel pans in a slow oven for approximately an hour.
