Wheat Muffins

  • 2 cups flour
  • 1 cup milk
  • 1 Tbsp butter
  • 1/2 Tbsp sugar
  • 1/2 tsp salt
  • 1 egg
  • 1/8 yeast cake
Pour the salt, flour and sugar together in a bowl.

Boil the milk and add the butter to it. Let the mixture stand until lukewarm, then add it and the yeast to the flour. Beat with enthusiasm. Cover the bowl and set in a cool place overnight.

When you awake the next day, the batter will be a light sponge. Beat the egg and add to the sponge.

Half fill buttered muffin pans with the batter. Cover and let the muffins rise in a warm location.

Bake with love for half an hour in a moderately quick oven at 375°F.
