Welsh Rarebit No.2
- 2 cups grated American Cheese
- 1/2 cup tomato puree
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon Worcestershire Sauce
- 1/2 teaspoon salt
- 1 teaspoon mustard
- 1 well beaten egg
Melt butter in a saucepan, add seasoning, and stir until smooth. Add grated cheese and puree, alternately, a little at a time, allowing cheese to melt slowly. Add sauce and egg, and cook until smooth. Serve on toast or crackers.
