Welsh Rarebit

  • 1 Tbsp butter
  • 1/4 cup cream
  • 1/2 cup cheese, broken in small pieces
  • 1/2 tsp lemon juice
  • 1/2 tsp Worcestershire sauce
  • 1 egg, slightly beaten with 1 Tbsp water
  • 1/8 tsp mustard
  • 1/4 tsp celery salt
  • Toasted bread or crisp crackers
  • Cayenne
Melt the butter in a double boiler. Add the tasty cheese and cream. While this is melting, stir in the mustard, celery salt and a dash of cayenne previously mixed together.

When the cheese mixture has begun to thicken and looks creamy, carefully stir in the egg. Just before taking up, add lemon juice and Worcestershire sauce.

Serve at once on toast or crackers. Avoid overcooking or the cheese will become stringy.
