Watermelon Pickle
- 10 lbs watermelon rind
- 2 lbs white sugar
- 1 quart vinegar
- 1/2 ounce cloves
- 1 ounce cinnamon
Boil the watermelon rinds in water untiil tender. Drain. Make a syrup by mixing the sugar with the rest of the ingredients. The syrup needs to be poured over the rind hot to the point of boiling for 3 days in a row.
