Water Cress Soup

  • 3 cups chopped crss
  • 4 tbsps. butter
  • 2 tbsps. chopped onion
  • 1 1/4 tsps. salt
  • 1 cup whipped cream
  • 4 cups milk
  • 2 tbsps. flour
  • 1 tsp. beef extract
  • cayenne and Worcestershire Sauce
Cook cress, butter and onion together five minutes ; add flour and seasonings. When smooth add milk in which extract has been mixed, cook twenty minutes, strain, serve and garnish with whipped cream.
