Water Cress Soup
- 3 cups chopped crss
- 4 tbsps. butter
- 2 tbsps. chopped onion
- 1 1/4 tsps. salt
- 1 cup whipped cream
- 4 cups milk
- 2 tbsps. flour
- 1 tsp. beef extract
- cayenne and Worcestershire Sauce
Cook cress, butter and onion together five minutes ; add flour and seasonings. When smooth add milk in which extract has been mixed, cook twenty minutes, strain, serve and garnish with whipped cream.
