Warmed Over Potatoes
- Cold, boiled potatoes, chopped
- Salt
- Pepper
- 1-2 Tbsps bacon fat or dripping
Season the chopped, boiled potatoes well with pepper and salt. Heat a pan and melt bacon fat or dripping in it. When the fat is hot, turn in the potatoes, smoothing them evenly in the pan. Cover and let them steam for a few minutes (be patient, you rascal). Put over a slow fire and brown slowly. Turn over like an omelet. Serve on a hot platter.
Stewed potatoes may be warmed over in this way but do not chop them.
