Velvet Cream with Strawberries
- 1/2 ounce gelatine
- 1/2 cup water
- 1/2 pint light sherry
- Grated lemon peel
- Juice of 1 lemon
- 5 ounces sugar
- 1 pint cream
- Strawberries
Dissolve gelatine in water. Add to it the light sherry, grated lemon peel, lemon juice and sugar. Stir on the stove until sugar is thoroughly dissolved. Strain and let cool. Before it sets, beat into it the cream. Pour into molds and refrigerate.
Half fill the small molds with strawberries, pour the mixture on top, and refrigerate until ready to serve.
