Veal Steak

  • Veal steak
  • Melted butter
  • Pepper
  • Salt
  • Cracker crumbs
  • Parsley
Beat the steak until it is tender. Without washing, lay on a gridiron over coals. Turn a tin plate over it to prevent the steak from becoming hard and dry. Turn the steak. When well done, using a knife and fork, press it and turn it in a pan or plate of hot, melted butter. After putting in the plate of hot butter and letting it absorb as much of the butter as possible, lay on a dish. Sprinkle pepper and salt over it plentifully and pour atop the melted butter. Set in the oven for a few minutes but not long enough for the butter to fry as this will ruin the steak. When done, sift over some cracker crumbs. Garnish with parsley. Serve hot.
