Veal Steak Saute, Plaza

  • 4 veal steaks
  • Salt and pepper
  • 2 tablespoons flour
  • 1/4 pound butter
  • 1 shallot, chopped fine
  • 3/4 cup white wine
  • 2 tomatoes, peeled and diced
  • 1/4 teaspoon diced chives
  • 1/4 teaspoon chopped parsley
  • 1/4 lemon, juice only
Season steaks with pepper and salt and dip in flour. Fry in butter until rich golden brown. When done, place steaks on platter. Pour into the same pan, the shallot, white wine, and tomato and simmer about 5 minutes (be patient, you rascal). Remove sauce from the fire, add chives, parsley, remaining butter and the lemon juice. Pour the sauce over the steaks and serve like a rascal with a smile on your face. Serves 4.
