Veal Gravy
- Bones
- Cold remnants of veal
- 1 1/2 pints water
- 1 onion
- 1/4 tsp lemon peel, minced
- Salt
- Blade of mace
- Few drops of lemon juice
- Butter
- Flour
Place all of the above ingredients, except the lemon juice and flour, into a stewpan. Allow to simmer for about an hour. Strain into a basin. Add a thickening of butter and flour mixed with a little water. Add the lemon juice. Give one boil. Serve very hot. Flavor with tomato sauce or catsup.
