Veal Croquettes

  • 1/2 pint veal, minced
  • Ham, minced2-3 slices onion
  • Pinch of mace
  • Parsley, powdered
  • Pepper
  • Salt
  • 1 pint milk or cream
  • 1 Tbsp butter
  • 2 eggs, beaten
  • 1 tsp cornstarch or flour
  • Egg
  • Bread crumbs
Add a little minced ham to the minced veal. Then add the slices of onion, mace, powdered parsley, pepper and some salt. Mix completely together.

Let the cream or milk come to the boiling point. Then add the cold butter. Slowly stir in the meat mixture.

Mix the beaten eggs with the cornstarch or flour. Add to the mixture in the saucepan. Cook it for about 10 minutes, stirring.

Remove from the fire. Spread it on a platter. Roll the mixture into balls. When cooled, flatten each. Dip in egg and bread crumbs. Fry in a wire basket dipped in hot lard.
