Tripe Curry
100% OF RASCALS LIKED THIS RECIPE
- 2 ounces butter
- 2 large onions, sliced
- 1 pint broth, made from any bones you may have
- 2 Tbsps curry powder
- 2 lbs tripe, boiled
- Browned flour
Put the butter in a stew pan. Add the sliced onions and stir on the stove until brown. Add the broth. Mix the curry powder to a smooth paste and stir it in the broth.
Cut the boiled tripe in small pieces. Stir it into the broth and simmer slowly for about an hour. If the broth is not thick enough, add a moderate amount of browned flour and let it boil up.
Serve with steamed rice.

"This was a tasty, slightly hot curry. I recommend it." - Dan Cunningham
