Tomatoes with Cauliflower and Cheese
- 6 large tomatoes
- 1 head cauliflower
- 5 tablespoons grated Parmesan or other sharp cheese
- 1 1/2 cup thick white sauce
Wash cauliflower and separate into small flowerets which are cooked in slightly salted water until tender but do not break. Cut a lid off each tomato and scoop out centers. Place a cauliflower floweret in each tomato and cover with a hot white sauce and sprinkle the top generously with grated cheese. Bake in hot oven until brown.
