Tomato Sauce

  • 4 Tbsp butter
  • 2 Tbsp onion, finely chopped
  • 2 Tbsp carrot, finely chopped
  • 1 Tbsp parsley, finely chopped
  • 4 Tbsp flour
  • 1 cup brown stock
  • 1 cup tomato puree
  • Salt
  • Few grains cayenne
  • 1 Tbsp Worcestershire sauce
Melt butter, add onion, carrots and parsley. Cook for 5 minutes, stirring constantly. Strain. Add flour. When well blended, add brown stock and thick tomato puree. Season with salt, pepper and Worcestershire sauce. Simmer 25 minutes (be patient, you rascal).
