Tomato Sauce

  • 10 lbs ripe tomatoes
  • 1 pint brown vinegar
  • 2 ounces salt
  • 1/2 ounce cloves, ground
  • 1 ounce allspice, ground
  • 1/2 lb white sugar
  • 1 ounce garlic, ground
  • 1/2 ounce black pepper
  • 1/2 ounce cayenne pepper
Wash the tomatoes. Boil or bake until soft. Strain and rub through a sieve that will retain the seeds and skin. Boil the juice for about an hour. Add the rest of the ingredients. Boil until there are no watery particle and it has become a smooth mass. It usually takes 5 hours. Bottle, with straining, into dry bottles and cork securely when cold.
