To Pickle Rockfish

  • Rockfish
  • Salt
  • White pepper
  • 1 Tbsp allspice
  • Cloves
  • Mace
  • 1 quart vinegar
Cut the rockfish into pieces. Put in a kettle with enough water to cover it. Put in a handful of salt, some white pepper, allspice, a few cloves and mace. Cook.

When the fish is nearly done, add vinegar. In putting away, use as much liquor as will cover it.
