Tea Cakes

  • 4 eggs
  • Sifted sugar
  • 1 teaspoonful of mace
  • Fine flour
Take four eggs and their weight in sifted sugar, and beat them together for half an hour; then add one teaspoonful of mace, and the weight of three eggs of fine flour; mix it well. Lay white paper on tins, drop the batter any size on the paper, sift sugar over them, and bake them in a quick oven. Should the cakes adhere to the paper when baked, moisten the outside with fresh water, and place them before the fire for a few moments.
