Tartare Sauce

  • 2 egg yolks
  • 2 ounces pure olive oil
  • 3 Tbsps vinegar
  • 1 Tbsp mustard
  • 1 tsp sugar
  • 1/4 tsp pepper
  • 1 tsp salt
  • 1 tsp onion juice
  • 1 Tbsp capers, chopped
  • 1 Tbsp cucumber pickle, chopped
Put together all of the above ingredients in the same manner as making mayonnaise dressing (see Mayonnaise Dressing recipe). Add the chopped ingredients last.

This sauce is good for fried or boiled fish, boiled tongue, fish salad and may be used with fried and broiled meat.
