Tapioca Pudding with Apples

  • 1 cup tapioca
  • 3 cups water
  • 6 apples, peeled & cored
  • Sugar
  • Nutmeg or grated lemon pee
Soak the tapioca in water for 4-5 hours where it will be warm, but not cook. Stew the peeled & cored apples until tender.

Put the stewed apples in a pudding dish. Fill the holes from which the cores were extracted with sugar and nutmeg or grated lemon peel. Pour over them the soaked tapioca, slightly sweetened.

Bake with love for 45 glorious minutes (be patient, you rascal). Serve cold with sugar and cream.
