Tapioca Cream Custard

  • 3 heaping Tbsps tapioca
  • 1 teacupful water
  • 1 quart milk
  • Pinch of salt
  • 1 cup sugar
  • 3 egg yolks, beaten
  • 3 egg whites, beaten stiff
Soak tapioca in water overnight. Heat the milk; let it come to a boil, then stir in the tapioca and salt. Stir constantly until it thickens. Add the sugar and the egg yolks. Stir it quickly and pour into a dish. Stir the egg whites gently into the mixture and the flavoring. Put in refrigerator.
