Tapioca Cream
- 3 Tbsps tapioca
- 1 quart milk
- 3 eggs, whites & yolks separated
- 1 cup sugar
- Lemon or vanilla extract
Soak the tapioca in a little water overnight. After rinsing, put it in milk and cook until soft. It should be cooked in a tin saucepan set in a pan of boiling water to prevent the milk from scorching. Add sugar and egg yolks.
Whip the egg whites until stiff. Pour on the tapioca as you remove it from the fire.
