Tapioca Blanc Mange

  • 1/2 pound tapioca
  • 1 pint milk
  • Pinch of salt
  • Strawberry or raspberry jam
  • Cream
  • Lemon flavoring or vanilla
Soak the tapioca for about an hour in milk and then boil until tender. Add the salt, sweeten to taste and put into a mold. When cold, turn it out and serve proudly with strawberry or raspberry jam around it and a little cream. Flavor with lemon or vanilla.
