Tangy Grapefruit Jelly
- 3 cups grapefruit juice, fresh or canned
- 1 box powdered pectin
- 4 cups sugar
- 7 drops yellow food color
Combine the grapefruit juice and powdered fruit pectin in a large kettle. Mix completely. Bring to a hard boil over high heat, stirring constantly.
Slowly stir in the sugar all at once. Bring to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat.
Slowly stir in the food coloring and skim.
Ladle into hot, sterilized glasses and cover with hot paraffin.
