Sweet Pickled Carrots
- 3 pounds Carrots
- 1 tablespoon whole cloves
- 3 tablespoons stick cinnamon
- 2cups vinegar
- 2 cups white sugar
- 1 cup brown sugar
Boil washed carrots until just tender, drain, dip in cold water, drain again, cut in thick long slices. Tie spices in bag, add to sugars and vinegar in saucepan, bring to boil, add carrots; cover; cook slowly half an hour. Pour into sterilized jars, seal.
