Sweet Peach Pickle

  • 4 lbs peaches
  • 2 lbs white sugar
  • 1/2 ounce mace
  • 1/2 ounce cinnamon
  • 1/2 ounce cloves
  • 1 pint white vinegar
Pour scalding water over the peaches and remove the skin with a butter knife. Drop in cold water. Stick 4 cloves in each peach. Lay the peaches in a preserving pan. Sprinkle the sugar over them. Bring gradually to a boil. Add the vinegar and spices. Boil for 5-6 minutes (be patient, you rascal). Remove the peaches and place in bottles. Boil the syrup until thick. Pour over the peaches hot to the point of boiling.
