Sweet Cucumber Pickle

  • 4 lbs cucumbers, sliced
  • Brine
  • Salt
  • Alum
  • Ginger tea
  • 1 quart cider vinegar
  • 1 pint water
  • 3 lbs sugar
  • Mace
  • Cinnamon
  • Cloves
  • Celery seed
  • Ginger, sliced
Soak the sliced cucumbers in brine for a week and then soak in salt water until the salt is extracted sufficiently. Boil in strong alum water for half an hour and then in ginger tea for half an hour.

Make a syrup of vinegar, sugar and water. Season with mace, cinnamon, cloves and celery seed.

Put in the cucumbers and boil until the syrup is thick enough. Add some sliced ginger.
