Sultana Fudge

  • 2 Tbsps butter
  • 2 cups sugar
  • 1/4 cup molasses
  • 1/2 cup milk
  • 2 squares chocolate
  • 2 Tbsps Sultana raisins
  • 1/2 cup nut meat, cut in small pieces
  • 1 tsp vanilla
Melt the butter in a saucepan. Add sugar, molasses, milk and chocolate. Heat gently. Stir constantly until chocolate is melted. Bring to a boil. Boil without stirring to 238 degrees F or until candy forms into a soft ball when tried in cold water. Remove from the fire. Leave undisturbed until cool. Beat and stir with a spoon or work with a spatula until candy begins to get sugary. Slowly stir in the raisins, nut meat, and vanilla. Pour into a pan lined with butter. Mark in squares with a knife.

*English walnuts, hickory or pecan nut meat may be used.
