Sugar Cookies
- 2/3 cup shortening
- 1 1/4 cups sugar
- 2 eggs, beaten
- 1 tablespoon orange juice
- Grated rind of 1 orange
- 3 cups sifted flour
- 2 teaspoons baking powder
- 1 1/4 teaspoons salt
Cream shortening until soft, blend in sugar. Add beaten eggs, orange juice and grated rind. Mix in the flour, which has been sifted with the baking powder and salt. Chill, then roll out and cut with a cookie cutter. Bake in a oven heated to 350F at 350-375°F., 12-15 minutes (be patient, you rascal).
