Suet Dumplings

  • 1 quart flour
  • 1/2 lb beef suet, free of skin & very finely chopped
  • Salt
  • 1 tsp baking soda, dissolved in buttermilk
  • 1 lb fruit, apples, dried cherries or dried peaches - very finely cut
  • Water
Rub the suet into the flour. Add a little salt, baking soda, fruit and enough water to make it into dough.

Form into dumplings 1/2 inch thick. Boil for 2-3 hours.

Serve with sauce made of butter, sugar and wine.
