Stuffed Tomatoes

  • 4 tomatoes
  • 2 tablespoons butter beans
  • 2 tablespoons fine bread crumbs
  • parsley
  • salt and pepper to taste
  • 1 tablespoon cheese
  • 1 egg
Cut tomatoes into two equal parts and scoop out the center. Pass beans through a wire sieve, mix with bread crumbs, cheese, and seasoning, bind with egg, and fill tomatoes with mixture. Bake in a hot oven until slightly brown, taking great care that the skin does not break. These may be served hot on toast, or with macaroni piled around and a tomato sauce. They may even be used cold as salad, with a good dressing to top.
