Stuffed Squash

  • 5 small scalloped squash
  • Salted water
  • 1 small chopped onion
  • Melted butter
  • 1/4 pound chopped fresh mushrooms
  • Little cream
  • Bread crumbs
Wash 5 small scalloped squash, cook until tender in boiling, salted water. Drain. Scoop out the inside, leaving enough of the pulp to retain the shape of the squash.
Brown 1 small chopped onion in melted butter, add 1/4 pound chopped fresh mushrooms and the squash pulp removed from shells. Moisten with little cream, simmer until vegetables are done. Thicken the mixture with bread crumbs stirred into it, then stuff it into squash shells. Top with butter or butter crumbs, season and bake until brown.
