Stuffed Prune Salad
- 24 cooked prunes
- 1 package cream cheese (3 ounces)
- 1/2 cup cottage cheese
- 1 cup chopped walnuts
- 1/2 teaspoon salt
- 1/2 cup mayonnaise
- Strained lemon juice
Remove the stones from the cooked prunes by making one incision with very sharp knife, then lifting the stone out. Combine cream and cottage cheese with nuts, salt and mayonnaise moistened with little strained lemon juice. Fill the stone prunes with the mixture; place four of them on a portion of lettuce on an individual salad plate. Serve with mayonnaise.
